Cauliflower Tacos with Chipotle Cashew Cheese

Calling ALL cauliflower lovers! These cauliflower tacos with chipotle cashew cheese are a weekly staple for me. I love a good taco Tuesday, but wanted a meatless version to enjoy just as much. The first time I had these I was blown away by the mix of flavors, not only was it refreshing but also such a comfort meal with the warm chipotle cashew cheese mixed.



Roasted Cauliflower:

  • 4 Cups Cauliflower Florets

  • 1 Tbsp Avocado Oil

  • 1/4 Tsp Garlic Powder (or 1 minced garlic clove)

  • Salt + Pepper to taste

Cabbage Slaw:

  • 1/4 Head of Purple Cabbage (Thinly sliced or shredded)

  • 1 Tsp EVOO

  • 1 Tsp Lime Juice

  • Salt + Pepper to taste

Creamy Chipotle Cashew Cheese

  • 1/2 Cup Raw Cashes, Soaked for 30 Mins + Rinsed

  • 1/2 Cup Water

  • 1 Tsp Lime Juice

  • 1/4 Tsp Smoked Paprika

  • Pinch of Cayenne Pepper

  • Salt + Pepper to taste


Optional Toppings:

  • Lettuce

  • Jalapeno

  • Cilantro

  • Avocado



  1. Preheat oven to 450°F

  2. Add cauliflower to mixing bowl. Mix in oil, garlic, salt and pepper. Toss until cauliflower is fully coated.

  3. Place cauliflower on baking sheet in a single layer and roast for 30 minutes (flip halfway).

  4. Prepare the cabbage slaw. Mix together cabbage, oil, lemon juice, and salt in a bowl. Massage for about 2 minutes until tender.

  5. Prepare the chipotle cashew cheese. In a blender, mix together the cashews, water, lime juice, paprika, cayenne, and salt. Blend until creamy. Taste + adjust seasoning if needed.

  6. The best and final step! Fill each taco with the cabbage slaw, roasted cauliflower, and drizzle on the chipotle cashew cheese. I love the topping my tacos off with avocado + cilantro. Enjoy!
